What better time than the day after Halloween to cook up some fall inspired, pumpkin goodness? Some of these recipes call for canned pumpkin, but of course you can use "real" pumpkin if you have it on hand.
Lynette's Vanilla Pumpkin Soup - I wasn't so sure about this when my neighbor brought a bowl over, but one taste and I was hooked. I could eat this for days and not tire of it.
The Curvy Carrot's Pumpkin Pancakes - I actually found this recipe by accident and gave it a try last week. Best. Pancakes. Ever. I made them for breakfast once and we had them for dinner the other night too. You really need to try this recipe!
Spicy Pumpkin Cake with Chocolate Chunks - I found this on Kraft's website a few years back and it quickly became one of my all time favorite cakes. A slice with a cup of coffee is the perfect mid morning or afternoon snack.
Scarlett's Pumpkin Gnocci with Ginger Cream Sauce - My first attempts at this were not the greatest, but once I nailed the gnocci it became a hit with the family!
My Favorite Pumpkin Bread - This is my standby pumpkin bread recipe. Toast a slice of this, spread on some cream cheese and enjoy!
