Red Potatoes Recipe

I love red potatoes in cream sauce and was hesitant to try anything different with them. As they say, necessity is the mother of invention. I raided the fridge and this was the result. It was great warm and really good cold the next day. Cold it is a nice alternative to regular potato salad.

10 small red potatoes, unpeeled, cut into 1/4 inch thick slices
1/2 cup diced carrots
3/4 cup diced celery
1/4 cup diced red onions
2 Tbsp. chopped parsley
1/4 cup red wine vinegar
1 Tbsp. olive oil
1 tsp. sugar
1/2 tsp. Dijon mustard
1 large clove garlic, minced
1/4 tsp. black pepper

Steam potato slices until tender, about 10 minutes. Add carrots and continue to steam for another 5 to 7 minutes. Drain off water. In a large bowl toss potatoes, carrots, celery, onions, and parsley until well mixed. In a small bowl whisk together all other ingredients. Pour over potato mixture and stir gently until well mixed. Serve either warm or cold
